Spinach and jamón courgetti

Ingredients (serves 4)

Method

  • Peel and spiralise the courgettes. Sprinkle them with salt and let them sit in a colander in the sink for half an hour
  • Fry the spinach in a pan on low heat with a dash of oil until it cooks down, then add the garlic and fry
  • As the vegetables cook, tear the jamón into medium size slices
  • After the courgetti has drained properly, add it to the pan and fry on medium heat for five minutes
  • Add the cream cheese, and once it has melted, grate the parmesan on top
  • Stir throughout
  • Serve and add the jamón on top
  • Add salt, pepper and parmesan to taste
