- Pre-heat the oven to 180°C
- Finely chop the onions, mushrooms and garlic
- Mince the meatballs with your hands in a large bowl until they form a paste
- Add the onions, mushrooms and garlic, followed by a sprinkling of smoked paprika, sage and cumin
- Blend the mixture with your hands until everything is evenly spread
- Rinse the peppers and using a fine knife, cut a small hole around the stem to remove the stalk and seeds
- Divide the mixture and stuff each pepper with half
- Grate parmesan (or a cheese of your choice) on top
- Place on a baking tray in the oven for 30 minutes
