Stuffed peppers with Linda's

Ingredients (serves 2)

Method

  • Pre-heat the oven to 180°C
  • Finely chop the onions, mushrooms and garlic
  • Mince the meatballs with your hands in a large bowl until they form a paste
  • Add the onions, mushrooms and garlic, followed by a sprinkling of smoked paprika, sage and cumin
  • Blend the mixture with your hands until everything is evenly spread
  • Rinse the peppers and using a fine knife, cut a small hole around the stem to remove the stalk and seeds
  • Divide the mixture and stuff each pepper with half
  • Grate parmesan (or a cheese of your choice) on top
  • Place on a baking tray in the oven for 30 minutes
